What would afternoon tea be without some treats? Scones, crumpets, tea sandwiches, savories and cakes are all part of this delicious ritual.

Scones are believed to have originated in Scotland, and is a small quickbread made with baking powder. Below is an easy recipe for lemon scones.

Crumpets are generally circularand have distinctive flat top covered in small pores and a resilient, slightly spongy texture. Popular accompaniments include jam, marmalade, honey, and lemon curd.

Lemon Scones

Lemon Scones

Ingredients:
2 cups unbleached, all-purpose flour
1 cup cake flour
1/2 cup granulated sugar
1 Tablespoon plus 1 tsp. of baking powder
1/2 tsp. salt
1 large egg, beaten
1 cup heavy cream plus 1 tablespoon
1 tsp. grated lemon zest
Devon cream to spread on at table.

Directions:
Preheat oven to 450 degrees.
Line baking sheet with parchement paper or use a non-stick sheet.
Combine flours, sugar, baking powder and salt in mixing bowl>
Stir in egg, cream and lemon zest into dry ingredients to just moisten.
Turn dough onto floured surface and divide in half.
Shape each half into 6 inch disk. Each each disk into 6 wedges.
Place 1/2 inch apart on baking sheet. Brush tops with heavy cream and sprinkle with sugar.
Bake until golden; 12-15 minutes.

Serve with jam and Devon cream.

Makes about 12 scones.
